Waffles - Golden Pecan, Berry Topping Yield

Golden Pecan Waffles
Ingredients:
- 
2 ¼ cups water
 - 
1/4 cup cornmeal
 - 
1/2 cup un-bleached flour or ww pastry flour
 - 
½ cup pecans
 - 
1 cups quick oats
 - 
1/3 cup shredded coconut
 - 
1 tsp. vanilla
 - 
1 tsp. maple flavor
 - 
½ tsp salt
 
Instructions:
- 
Preheat the waffle iron and spray with a non-stick coating.
 - 
Place all the ingredients into the blender (the Vitamix or Champ works best) and blend on high till very smooth.
 - 
Pour the batter into the hot waffle iron till the griddle is full.
 - 
Close the lid and bake the waffle for 8 minutes.
 - 
Lift the waffle off the griddle with a fork and place on a cooling rack to cool or serve immediately.
 
Berry Topping Yield
Ingredients:
- 
8 cups fresh or frozen blueberries, raspberries, strawberries, etc
 - 
1 cup chopped dates – optional Pinch of salt
 - 
1 cup apple or white grape juice concentrate
 - 
5 T cornstarch
 
Instructions:
- 
Place the first three ingredients into a small pot and heat on medium high heat till berries give off juice and come to boil.
 - 
Whisk the cornstarch with the concentrate and pour into the boiling berries.
 - 
Cook till clear & thick. The berries color will deepen as they cook.
 - 
Remove from heat and serve.
