Cobblers & Crisps - Fruit Crisp, Date Bars

Fruit Crisp
Ingredients:
Filling
- 
6 cups Fresh or canned fruit (e.g. pear, peaches, apples, blueberries)
 - 
1 cup Apple or white grape juice concentrate
 - 
2 Tbl. Honey
 - 
3 Tbl. Cornstarch
 
Topping
- 
3 cups quick oats
 - 
¾ cup Whole Wheat Pastry Flour
 - 
½ cup Nuts – chopped
 - 
½ tsp Salt
 - 
½ cup Oil
 - 
½ cup Honey or other natural sweetener
 - 
½ cup water
 
Instructions:
- 
Preheat the oven to 350˚F. Spray a 9x13” casserole dish with non-stick coating.
 - 
Wash, peel and dice the fresh fruit and place in the bottom of the dish. If using canned fruit drain the juice off and dice the fruit if necessary.
 - 
Place the fruit in a pot. In a small bowl mix together the juice concentrate, honey and cornstarch, and pour it over the fruit.
 - 
Mix them together and place the pot on the stove and heat till the fruit thickens.
 - 
Place the fruit into the bottom of a baking dish. In medium size bowl put the oats, flour, nuts, and salt.
 - 
Mix well and form a well in the middle of the flour.
 - 
Into the well pour the oil, honey and water. Mix everything together thoroughly until no dry streaks are left.
 - 
Using your hands crumble and spread the mixture on top of the fruit evenly.
 - 
Bake the crisp for 30-35 minutes until the top is slightly brown and firm. Serve hot or cold with milk or cream.
 
Date Bars
Ingredients:
Crust
- 
5 cups quick oats
 - 
2 cups ww pastry flour
 - 
1 1/3 tsp salt
 - 
1 cup oil
 - 
1 honey, maple syrup of choice
 - 
2 tsp vanilla
 - 
1/3 cup water
 
Filling
- 
3 cups dates
 - 
1 cup walnuts chopped
 - 
2 tsp vanilla
 - 
1/4 tsp salt
 - 
2 1/3 cups water
 
Instructions:
- 
The first step is to prepare the filling. Place the dates, water, vanilla and salt into a pot and bring it to a boil.
 - 
Turn the heat off and let the dates sit till they are soft.
 - 
Mash the dates and mix in the walnuts.
 - 
Prepare the crust in a medium size bowl.
 - 
Mix together the oats, pastry flour, and salt.
 - 
Form a well in the middle of the day ingredients.
 - 
Add the oil, syrup, vanilla and water into the dry and mix well until all the dry ingredients are throughly coated.
 - 
Divide the crust into two equal sections.
 - 
Place one half into the bottom of a casserole dish or cake pan and press evenly into place.
 - 
Dump all the filling on top of this bottom crust and spread around evenly.
 - 
Crumble the remaining crust on top of the filling and press it down with a metal spatula.
 - 
Bake the bars in a 350˚F for 35-40 minutes or until the crust is firm and dry.
 - 
Cool the bars completely and then cut them into squares the size of your choice.
